Local Recipe – BBQ Geldernman Pork Ribs

In another part of our Local Food Challenge recipes, we take a look at Andrea’s Gelderman Pork Ribs from 2012!

Andrea has come up with a great recipe  while on the local food challenge. It can be eaten for breakfast or dinner!

BBQ Gelderman  Pork Ribs

Serves 2

  • 1 rack pork ribs

Dry rub

Sauce

  • 2 ripe Apricots
  • 2 clove garlic
  • 2 shallot
  • 1/4 cup dry white wine or apple juice
  • 2 bay leaves
  • Herbs, thyme, rosemary or oregano
  • 4 tbls honey

Grind dry rub ingredients in mortar. Rub on ribs an d rest overnight in fridge.

Make sauce by putting apricot, garlic, shallot, and wine in blender. Cook over low heat with honey an herbs season w salt. Cook 10 minutes until. Thick and saucy. Cool.

Cook ribs indirectly on BBQ or roast in oven at 275 -300 for an hour. Glaze ribs with sauce and continue cooking for another hour or until tender. Reapply glaze as needed.
